Had special projects due today for work, so any thoughts of popping out to draw the naked were cancelled. Instead, today you get food. Apologies to those who were waiting for the nudes. There will be more on Tuesday evening.
Today for lunch, there was no mayo in the fridge and I wanted a salmon salad with mayo. Its actually surprisingly easy with a food processor. You’ll need an egg, a cup of oil ( I used extra virgin olive), a quarter cup of vinegar (champagne here), some salt, some pepper, some lemon juice, and some dried mustard powder (you have some left over from Easter Ham glaze.) Beat the salt and a teaspoon of dried mustard powder into the egg, vinegar, and lemon juice. Dump that into the food processor and turn it on, then really, really slowly pour a thin stream of olive oil into the processor as it spins. It will start to thicken in about 2 minutes. This stuff does not taste like the grocery store mayo, but then again, there’s an awful lot of stuff in that store-bought mayo to keep it fresh on the grocery shelves for a long, long, LONG time. I combined it with dill, taragon, and some pink salmon, and laid it over bibb lettuce, campari tomatoes, and some grated manchego cheese.
