Strangely enough, the answer is yes. I’ve been bacon-and-egging it pretty seriously over the past few weeks each morning for breakfast. Its pretty easy to slam together a breakfast sandwich at work if you have a nice piece of sourdough bread, some maple-bacon, some cheddar, and a paper coffee cup and paper plate, and of course, one egg. This morning I remembered I bought a quarter pound of lovely herbed smoked salmon from Neopol at Union Square in Washington DC, which isn’t far from where I live. If you live in DC, you should pay them a visit. I took the skin off, cut it into cubes, and put it in the food processor along with a tbsp of dill, 8oz of Neufchatel Cream Cheese (a bit lighter than the regular), and a tbsp of cocktail sauce. Blitz it until its creamy smooth and pink-tinged.
Also got a nice loaf of sourdough bread, and cut myself a slice and toasted it.
With a nice, sharp knife, slice off some very thin slices of tomato. I prefer Campari tomatoes as they have that nice vine picked taste and are usually firm, fruity and delicious.
place the layer of sliced tomatoes over your schmeer (they call it that in places where you buy bagels), then sprinkle a few capote capers across the top. I’ve garnished mine with a couple sprigs of fresh chives.
